Today I prepared an uncomplicated bean and rice taco with tomatoes, cilantro, and red onion. I tend to keep my food reasonably simple.
I like the Mission brand extra thin corn tortillas. This tortilla is minimally processed with very few ingredients, and no oil or sugar added. Today I laid the thin tortillas between damp paper towels and warmed them in the microwave for less than thirty seconds to gently soften, allowing them to wrap nicely. I also made chips by microwaving several thin tortillas on a plate for about forty-five seconds on each side. Remove them from the microwave when they begin to brown. They will be nice and crispy.
If I am not making refried beans in my Instant Pot, I like to purchase Ortega Fat-Free Refried Beans because they have no added oil and are lightly seasoned. Other brands are labeled Fat Free, but if you read the ingredient list, you will see added oil. See Jeff Novick’s explanation here. Reading food labels is essential.
The Ortega brand of fat free refried beans does have added sodium. Enough that no additional salt is necessary in or on the remaining ingredients. Beans are a great source of protein, iron and satisfying fiber.
I am not perfect. I am not 100% whole food plant based, but I’m pretty close. I’ll be visiting my elderly Mother in a few days, and I will eat a variety of goodies she prepares. Though I prefer not to eat red meat, pork or lamb any longer, I may eat a small amount of something with egg, fish or oil in it or a small amount of cheese, perhaps a dessert, etc. When I get together with friends, I do my best to make good choices. But, I don’t worry about those instances when I’m not 100% whole food plant based because they are the exception and not the rule. My overall habits are good, and I’m happy with that.
Why do I share my gaps? Because I hope you are kind to yourself. Kind enough to focus on moving toward healthier food choices, making progress everyday and kind enough to not give up due to lack of perfection. Ancient philosophers encourage us to~ Reflect on your day.
