Beans, Rice, And Fresh Pico

Hello Friends~

I prepared a quick batch of black beans in my Instant Pot, one of my favorite appliances. I set the timer for 15 minutes and allowed a natural release. The beans were tender but not mushy. Preparing beans at home enables me to manage the sodium content and incorporate the spices I love.

Instant Pot Black Beans

2 Cups of Dry Black Beans, rinsed
8-10 Cups of Water
1 tsp Onion Powder
1 tsp Garlic powder
1 tsp Ground Cumin
½ tsp Salt
½ tsp Cayenne Pepper

Choose the high pressure setting on your Instant Pot and set the time to 15 minutes. When the time has expired, allow a natural release. Drain after cooking. They are mildly seasoned but you can double the seasoning before cooking if you prefer a more intense flavor. I prefer to under salt, though, and add freshly squeezed lemon juice after cooking before adding additional salt.

While the beans were cooking, I prepared rice and fresh pico de gallo. Here is my simple pico recipe:

Fresh Pico De Gallo

½ White onion, diced
2 each Jalapeño and Serrano peppers, diced. Seeds and ribs contain the “heat”. Adjust the heat by retaining or removing the seeds and/or ribs.
5 Roma tomatoes, diced
½ to 1 bunch of cilantro, chopped
½ fresh lime or lemon – juiced

Before adding salt to taste, add the juice of ½ fresh lemon or lime, which is a flavorful salt substitute. Then salt to taste. Some in my family thought I added too much onion. I personally love onions!

The black beans and rice with the added fresh pico are delicious. The black beans are a valuable source of protein without the saturated fat of meat. They are an excellent source of fiber for a healthy digestive system and also a source of vitamins and minerals. The nutrition data can be found here.

Pico De Gallo is naturally high in Potassium, Vitamin C and Vitamin A. Adding greens to our meals is an essential aspect of incorporating whole food into our meal plans. Remember that fresh herbs, such as cilantro, are greens too.

Lastly, I included fresh, juicy watermelon with my meal. Altogether ~ Delicious! I actually ate this every day last week until it was gone. I craved it every day. So, so good!
