It’s another Soy Curl day! Full disclosure~ I ordered an entire case of Soy Curls directly from the manufacturer! Well seasoned Soy Curls are truly scrumptious and, since I have a case, everyday is Soy Curl day for awhile! Yum! The Maple Miso Soy Curls (Link here) are delicious! Today, I prepared spicy Chipotle Lime Soy Curls with a sweet and savory Chiptole Maple Dressing. I think you’ll love this. I am tucking the seasoned Soy Curls into lettuce wraps, but honestly, the Chipotle Lime Soy Curls or Maple Miso Soy Curls would be delicious on a pizza, sandwich, or salad as well.

Soy Curls are dehydrated soybeans made by Butler Foods (link here). Soy Curls are a minimally processed and an excellent source of protein and fiber. Soy Curls are all about the texture. They are firm like al dente pasta. Rehydrating Soy Curls by cooking in the seasoned marinade allows them to soak up all the flavor and maintain the perfect firm texture. They are ready to eat after the saute step, but I like to toss the Soy Curls into the air fryer after sauteing to create a crisp outer layer before building the lettuce wraps.

The chipotle lime marinade includes barley miso made by South River Miso (link here). Barley Miso adds a subtle flavor, which I almost want to say resembles beer, but not an intense beer flavor. It’s quiet in the background. Of course, we have to include freshly squeezed lime juice. The lime gives the marinade a refreshing lift. One of my favorite spices in this marinade is Mexican Oregano, which is an entirely different plant than Italian Oregano. I use it generously in the Cold Summer Chili recipe (link here). Mexican Oregano adds it’s own unique citrusy lime flavor. The seasoned Soy Curls, along with the Chipotle Maple Dressing are the perfect sweet and savory combination. Wrapping it all in the leaf lettuce with fresh herbs and vegetables is a pleasantly satisfying meal. ** A note regarding air frying. I have a Breville Smart Oven which has a preset air fry setting. The temp is 405˚˚˚ ** Enjoy!

Ingredients
Chipotle Lime Soy Curls
- 2 Cups Soy Curls Butler Foods
- 1 1/2 Cups Water
- 1 Lime Juiced
- 1 tbsp Chili Powder
- 1 tsp Barley Miso I use South River Miso
- 1/2 tsp Mexican Oregano
- 1/4 tsp Salt
- 1/4 tsp Onion Powder
- 1/4 tsp Cumin Ground
- 1/4-1/2 tsp Chipotle Powder Spicy, add to taste
- 1/8 tsp Garlic Powder
Chipotle Maple Dressing
- 1/3 Cup Raw Cashews
- 1 1/3 Cup Water
- 1 tbsp Lemon Juice Fresh Squeezed
- 2 tsp Maple Syrup 100% Pure
- 1 tsp Barley Miso I use South River Miso
- 1/4-1/2 tsp Chipotle Powder Spicy, add to taste
Fresh Vegetables
- 1 Head Red Leaf Lettuce
- 12 Tomatoes Grape Sized
- 1 Jalapeno Pepper
- 1/2 Cup Cilantro Leaves
- 3 Green Onions Cut in long strips
Instructions
Chipotle Lime Soy Curls
- Prepare the marinade by all of the ingredients for the Chipotle Lime Soy Curls except the Soy Curls in a saute pan. Bring it to a simmer.
- Add the Soy Curls and stir to incorporate. Stir and simmer until the water is absorbed and curls are well covered with the marinade. If you are air frying, remove from pan and add to air fryer. If you plan to eat them without air frying, continue to cook until the texture suits you. 3-5 minutes.
- Air Fry until lightly browned. This time will vary depending on your air fryer. I add mine to a cold air fryer, press start, and it goes through a preheat and air fry cycle. 10-12 min. Watch Carefully, Check often.
Chipotle Maple Dressing
- Add one cup of water and the raw cashews to a small pan. Simmer 3 minutes, drain and add to your high-speed blender.
- Add the remaining 1/3 cup of water to the blender along with the dressing ingredients. Blend until smooth.
Fresh Vegetables
- Wash vegetables and pat dry. I use one large and one small lettuce leaf for each wrap. Slice tomatoes, green onions, and jalapeno. Remove cilantro leaves from stems. Assemble your wraps.
