Lettuce Wraps With Maple Miso Soy Curls

Ingredients

Maple Miso Dressing

  • 1/3 Cup Cashews Raw
  • 1 1/3 Cup Water
  • 1 tbsp Lemon Juice Fresh squeezed
  • 2 tsp Maple Syrup 100% Pure
  • 1 tsp Barley Miso I used South River brand Three Year Barley Miso

Maple Miso Soy Curls

  • 1 1/2 Cup Soy Curls www.butlerfoods.com
  • 1 1/2 Cup Water
  • 2 tbsp Barley Miso I used South River brand Three Year Barley Miso
  • 2 tbsp Maple Syrup 100% Pure

Wrap

  • 1 Head Red Leaf Lettuce
  • 1 Handful Chives Fresh
  • 12 Tomatoes Grape Sized

Instructions

Maple Miso Dressing

  • Simmer raw cashews in 1 cup of water for five minutes. Drain and add to high speed blender.
  • Add remaining water,fresh lemon juice, miso, and maple syrup to blender with cashews and blend until smooth.

Maple Miso Soy Curls

  • Add miso, maple syrup and water to small mixing bowl and whisk together until incorporated.
  • Pour whisked ingredients into saute pan along with soy curls. Saute until the sauce is absorbed and soy curls are lightly browned. The Soy Curls are ready to eat now or.... if you have and air fryer, add the next step.
  • Transfer the Soy Curls to your air fryer and cook until lightly browned. The air fryer adds a crisp outer layer on the Soy Curls.

Wrap

  • Remove lettuce leaves from the head of lettuce, rinse and pat dry. Rinse the chives and tomatoes and pat dry.
  • I used one large and one small lettuce leaf per wrap. Lay leaves flat, add Soy Curls, chives, tomatoes, and Maple Miso Dressing. Fold a small portion of the lower leaf up to cover the lower ingredients. Fold over each side for final wrap. Enjoy!
