Ingredients

Chipotle Lime Soy Curls

  • 2 Cups Soy Curls Butler Foods
  • 1 1/2 Cups Water
  • 1 Lime Juiced
  • 1 tbsp Chili Powder
  • 1 tsp Barley Miso I use South River Miso
  • 1/2 tsp Mexican Oregano
  • 1/4 tsp Salt
  • 1/4 tsp Onion Powder
  • 1/4 tsp Cumin Ground
  • 1/4-1/2 tsp Chipotle Powder Spicy, add to taste
  • 1/8 tsp Garlic Powder

Chipotle Maple Dressing

  • 1/3 Cup Raw Cashews
  • 1 1/3 Cup Water
  • 1 tbsp Lemon Juice Fresh Squeezed
  • 2 tsp Maple Syrup 100% Pure
  • 1 tsp Barley Miso I use South River Miso
  • 1/4-1/2 tsp Chipotle Powder Spicy, add to taste

Fresh Vegetables

  • 1 Head Red Leaf Lettuce
  • 12 Tomatoes Grape Sized
  • 1 Jalapeno Pepper
  • 1/2 Cup Cilantro Leaves
  • 3 Green Onions Cut in long strips

Instructions

Chipotle Lime Soy Curls

  • Prepare the marinade by all of the ingredients for the Chipotle Lime Soy Curls except the Soy Curls in a saute pan. Bring it to a simmer.
  • Add the Soy Curls and stir to incorporate. Stir and simmer until the water is absorbed and curls are well covered with the marinade.
    If you are air frying, remove from pan and add to air fryer.
    If you plan to eat them without air frying, continue to cook until the texture suits you. 3-5 minutes.
  • Air Fry until lightly browned. This time will vary depending on your air fryer. I add mine to a cold air fryer, press start, and it goes through a preheat and air fry cycle. 10-12 min. Watch Carefully, Check often.

Chipotle Maple Dressing

  • Add one cup of water and the raw cashews to a small pan. Simmer 3 minutes, drain and add to your high-speed blender.
  • Add the remaining 1/3 cup of water to the blender along with the dressing ingredients. Blend until smooth.

Fresh Vegetables

  • Wash vegetables and pat dry. I use one large and one small lettuce leaf for each wrap. Slice tomatoes, green onions, and jalapeno. Remove cilantro leaves from stems. Assemble your wraps.

Notes

Red lettuce leaves are more fragile than other lettuce leaves. They are pretty and delicious, however, you may choose any lettuce leaf you prefer
